What Cut Of Corned Beef To Use

You can use a flat cut or point corned beef. The flat cut will tend to be a bit leaner. You will leave the cooking time the same, whichever cut you decide.

The flat cut is really the best cut of corned beef if you're wanting a leaner meat. They are both so tasty, and a lot of that has to do with the brisket brine.

How to Cook Corned Beef Brisket

Cooking corned beef brisket in the Instant Pot is pretty simple. First, add the onion and garlic to the inner pot. Salt beef and add the other seasonings. Then, place the corned beef brisket on a trivet on top of the onions, and add in the beer and water.

Set the manual high-pressure cooking time for 90 minutes. When the cooking time is nearly finished, you can start preparing the vegetables by cutting the cabbage and halving the red potatoes.

How Long to Cook Corned Beef

Corned beef internal temperature needs to reach 145 degrees F. This involves pressure cooking the beef for 90 minutes on high pressure, allowing to natural release for 20 to 30 minutes.

When that cooking time finishes, you'll add in the potatoes, carrots, and cabbage. Set on high pressure for 4 minutes to cook vegetables, and then do a quick release.

Next, remove from heat and use a thermometer to check the corned beef temp. The tender beef is ready at 145 degrees F.

Pickling Spices

When you buy corned beef you will find it comes with a little pack of pickling spices. I normally toss that into my recipe, and you certainly can, but this time I mixed up my own spice blend, which you'll find in the recipe card below. Do I Have To Use Beer

No, you don't have to use beer in this recipe. You will find the Guinness beer adds a ton of flavor to the meat, cabbage, and veggies.

If you don't want to use beer you can use a beef or chicken broth to replace the liquid, or even water.

How Long Can You Store Leftover Corned Beef

You can store your leftover corned beef and cabbage in the fridge for up to three days. Anything after that, use your best judgment.

Now you can freeze any corned beef you have. You will find the cabbage won't freeze that great as it is already wilted.

Place in an airtight container or a freezer bag. Place in the freezer for up to three months.

Thaw in the fridge the night before you plan to eat. Then reheat and enjoy! Make sure the corned beef internal temp is 145 degrees Fahrenheit.

Other Methods to Cook Corned Beef Cuts

Corned beef is a beef brisket that is soaked in a corned beef brine. It can be cooked in several ways, including in the pressure cooker like this recipe, sous vide, oven, or slow cooker.

How to Make Sous Vide Corned Beef

Make sure to plan way ahead if you decide to sous vide your corned beef. It needs to cook in a water bath of 135 degrees for 48 hours. This super-tender meat is worth it.

How to Make Corned Beef and Cabbage in the Oven

Baked corned beef cooking time depends on weight and the temperature the oven is set at. For a 350 degree oven, you will cook the corned beef at 15 minutes per pound. So, 1 pound would be an hour. 2 pounds would be 2 hours. And 2 1/2 pounds would be 2 hours and 30 minutes.

Slow Cooker Corned Beef

Crockpot corned beef needs to cook low and slow for about 8 hours. The vegetables can be added to the slow cooker when there are 3-4 hours left in the cooking time.

Instructions

  1. Add onion and garlic to the inner pot.
  2. Add in the beer and water. Then set the corned beef on the metal trivet and lower into the pot so it sits on top of the onions.
  3. Sprinkle seasoning over the beef.
  4. Close the lid and turn valve to sealing.
  5. Set cooking time for a manual high temperature of 90 minutes.
  6. When the cooking time has finished, allow the pressure to release naturally for about 20 minutes, and then release the remaining pressure.
  7. Remove the meat using the metal trivet and then add in the cabbage, potatoes and carrots. You shouldn't need to add additional liquid, since there will be at least 1-1 1/2 cups of liquid remaining.
  8. Close the lid and set the pressure valve to sealing again.
  9. Set for a high pressure time of 4 minutes to cook the vegetables to go with the Instant Pot Corned Beef recipe.
  10. Do a quick pressure release at the end of the cooking time and then slice the corned beef and serve with the vegetables.

Notes

  • This recipe was tested in an 8 quart Instant Pot Duo Crisp.
  • Because of the beer in the Instant Pot, your pressure cooker will likely steam and spit as it comes to pressure. If it does this in excess, sometimes shutting it off and restarting the pressure cook time does the trick.
